The influence of probiotic and conventional yoghurt on the oxidant and antioxidant status in plasma of young healthy women

Introduction: In the last few years there has been an increasing interest in the immune-modulating properties of probiotic yoghurts. Objective: Caused by the involvement of free radicals in immunological processes we tried to verify and compare the effects of probiotic (L.casei) and conventional yoghurt on the anti-oxidant and oxidant status in plasma of humans. Subjects and design: After a preadjustment phase of 1 week, female volunteers consumed 100g/day of probiotic (n=17) or conventional yoghurt (n=16) for 2 weeks (T1-T2) and 200g/day for another 2 weeks (T2-T3). A wash-out phase lasting 2 weeks followed. Methods: Total antioxidant capacity (TAC), albumin and bilirubin were determined photometrically, uric acid by enzymatic, vitamin E, carotenoids, MDA and CD using HPLC methods.
